I saw this today and immediately thought of the thousands of times I used the “side to side with the yolk in the shells” technique in my kitchen. No translation is needed here even though it is in Chinese. I am going to make Avgolemono soup for dinner tonight and possibly something that requires hollandaise sauce tomorrow. I am going to separate eggs like nobody’s business now that I have this new kitchen trick. Thank you, oh thank you to the lady in this video!!!!
